We manage our vineyards according to DEMETER agronomic standards, an organization that certifies biodynamic production on a worldwide basis.
The biodynamic method, “observes nature, agricultural activity and human nutrition from a different perspective”, is based on “the creation of an individual “agricultural organism” inserted in its own territory, thus guaranteeing the healthiness of the products and the lasting balance, with a view to the health of the land, agriculture and man” (Masson, 2011). The creation of this “agricultural organism” is pursued through a series of practices that have to do with the application of the so-called “spray” and “heap” biodynamic preparations, the diversification of farm production to protect plant and animal complexity , the breeding of animals within the company itself, the protection of fertile soil through careful land management (superficial plowing, mechanical weeding, green manure with legumes, maintenance of humus, etc.) and a specific technique of composting.
At FABULAS, following biodynamic practices for treatments, we only use copper, sulfur and plant infusions and decoctions. For fertilization we use manure, biodynamic preparations and green manure. We control wild herbs mechanically or with the help of flocks of sheep. We carry out all processing phases, from pruning to harvesting, manually. We produce wines linked to the territory by working on the selection of indigenous yeasts directly from the vineyard ecosystem integrated with the biodiversity of our territory. Yeast plays an important role, as it does not limit itself to producing ethyl alcohol and CO2, but enriches the wine with secondary products, an expression of the territory itself.
